Mette Blomsterberg uses glucose syrup in many of her ice cream recipes because it has a stabilizing effect that is beneficial for consistency. You can substitute with sugar, but it will have an impact on the final result.
But remember that a high amount of sugar is necessary to the softness of the ice cream. If you cut down on the amount of sugar, you will find that your ice cream or sorbet will become rock hard after freezing. Alcohol will also soften, so if you use it in an ice cream or sorbet, you may want to reduce the sugar by a little.
